Salt and Spices – Salt, pepper, and cinnamon are the only spices you’ll need for this sweet potato recipe! These three different spices join forces to create potatoes that are salty and sweet with just a tad of spice.

Maple Syrup – Maple syrup and sweet potatoes are a match made in fall food heaven! The robustness of the sweet syrup helps to bring out the full potential of the sweet potatoes and you only need a little bit unless you’re going for more of a dessert-type roasted sweet potato. 

Coconut Oil – If you’re not keen on the flavor of coconut oil, worry not! This recipe calls for refined coconut oil which has a totally neutral flavor. You could use a different oil such as avocado oil if you wish, though we’d recommend going with coconut oil if you can.

Sweet Potatoes – The star of the show! You could use any variation of sweet potato that you’d like such as a purple, white, orange or red sweet potatoes! While roasted white sweet potatoes may not look as pretty as the other colors, we guarantee they’ll still be delicious. Our only recommendation is to refrain from using regular potatoes for this recipe!

Ready to learn how to make the most perfect roasted sweet potatoes? These based sweet potato slices and cubes are perfect for brightening up a variety of different meals throughout the week. Throw them atop a sandwich with some grilled tofu and avocado, add them to a rice and chickpea bowl, or blend into a delicious fall soup! 
Roasted Baked Sweet Potato Slices and Cubes
Prep Time 10 minutes
Cook Time 30 minutes
Total Time 40 minutes
Servings 4 -6


  • 2 medium-sized sweet potatoes, chopped into ½ inch thick chunks, (about 1 lb)
  • 2 tablespoons refined coconut oil
  • 1 teaspoons maple syrup, I use Grade A Dark
  • ¼ teaspoon salt
  • ¼ teaspoon ground cinnamon
  • teaspoon black pepper


  • Preheat oven to 425º F (218º C). 
  • In a large bowl, combine coconut oil, maple syrup, salt, cinnamon, and black pepper. You may need to melt your coconut if it's solid!
  • Put chopped or sliced sweet potatoes into a large bowl and toss around until well-coated with mixture.
  • Transfer coated sweet potatoes onto a baking sheet and spread out evenly.
  • Put potatoes into the oven for 30-35 minutes,  turning over at the halfway mark with tongs or a spatula.
  • Once the potatoes are finished, remove from the oven, allow to cool, and enjoy!


  • For smaller parts at the ends of the sweet potato, feel free to not chop the pieces in half at all if they seem like they may burn too easily.
  • I use a stainless steel baking sheet without parchment paper. You’re welcome to use parchment paper if you’d like but I’ve never used it while roasting these sweet potatoes.
  • If you don’t have refined coconut oil on-hand, you could try this recipe with either sunflower or avocado oil instead but I have only made these potatoes using coconut oil! Olive oil could also potentially work but it could affect the flavor of the sweet potatoes since olive oil is not a neutral cooking oil. Virgin coconut oil is not recommended due to its lower smoking point of 350º F (177º C).
  • Feel free to increase or decrease the amount of spices to your liking as these potatoes are lightly spiced! I would not recommend decreasing the amount of oil or maple syrup used though you’re welcome to increase as you’d like!

Great question! You can either store these sweet potatoes in the refrigerator or freeze them. They’ll last about five days in the fridge or up to a year in the freezer if kept in an airtight container or resealable bag. If freezing, just allow them to cool completely after cooking and when ready to enjoy again, defrost for about 30 minutes at room temperature or pop in the microwave for a minute.

How long does it take for roasted sweet potatoes to go bad?

Roasted sweet potatoes will begin growing bacteria after about two hours if left at room temperature.

Can I double the recipe?

You surely can! We’d just recommend using a second baking sheet so the sweet potatoes have enough space. Just repeat the same exact instructions for the second sheet of sweet potatoes.

Can I use agave instead of maple syrup?

You could use agave instead of maple syrup if you’d rather use what you have on-hand or just prefer agave. We’d just recommend using a darker type that will more closely taste like maple syrup.
