Searching for the berry best way to begin breakfast? Our super simple, vegan strawberry juice recipe is made with only sweet, ripe strawberries and a little bit of sweetener. It takes only a few minutes to make and tastes fabulous when you’re on-the-go or your appetite is low.

Strawberry juice is not only a delightful addition to breakfast, but it can also bring a sweet element to a savory snack, smoothie bowl, and can even satisfy a sultry, summer day thirst. Wouldn’t it be fun to fill a day with fantastic friends, merry berry picking, and then enjoy a jigger of juice in the evening? Sounds like heaven to us!

These heart-shaped berries are not only beautiful, but they’re super healthy, too. Strawberries provide us with:

  • Lot of fiber
  • Polyphenols (high levels of antioxidants)
  • Vitamins and minerals, such as vitamin C, manganese and potassium.

Did you know that only only 8 strawberries give us more vitamin C than an orange and also 2 grams of fiber? Wow!

Strawberries are also amazing for our bodies and perfect to add into our daily diet because they’re:

  • Sodium-free
  • Fat-free
  • Cholesterol-free
  • Low in calories

What Months Are Strawberries in Season?

Good question! June is usually the time when strawberries ripen. But, with new frost-resistant varieties on the market today, the season could last from January to June. This is the perfect recipe to make at the end of strawberry picking season when the berries are super ripe and ready to go.

Are Organic Strawberries Better?

Strawberries are almost always listed as Number 1 in the Dirty Dozen list. This means that strawberries are not only pretty high in pesticides, but they’re also very porous. They soak up more chemicals than most fruits, which are almost impossible wash away.

If you’re able to afford organic strawberries, we would highly recommend it. But, if not in your budget or you just can’t find any in your area, don’t worry too much about it. Consider growing your own or visit your local farmer’s market for the most delicious, delicate berries.

How To Make Strawberry Juice

You’ll be amazed at how easy it is to make your own fresh juice. Keep in mind that you need a lot of beautiful berries to make a mugful of juice. Get a few family members or friends to help with the hulling.

  • Thoroughly rinse and drain the strawberries. Pat gently to dry.
  • Remove the strawberry tops and leaves.
  • Add strawberries a few to your juicer at a time.
  • Collect the juice and a squeeze of lime juice and a little sweetener, if desired.
  • Enjoy immediately!

How Do I Store Any Leftover Strawberry Juice?

Fresh strawberry juice will stay fresh in the fridge for up to 3 days. Make sure to shake before drinking, since the juice might start separating. This separation is totally normal.

You can also freeze the remaining juice by pouring it into an ice cube tray. Freeze overnight. You can then place the strawberry ice cubes into a freezer-safe bag or container for future use. Excellent for adding to seltzer water, fizzy drinks, iced teas, or lemonades. The frozen strawberry cubes will last up to 6 months, if stored properly.

Equipment You’ll Need

Because berries are softer than most fresh fruits, you can also use a blender combined with a fine-mesh sieve or nut milk bag instead of a juicer. The leftover strawberry pulp can be saved for adding to or topping nice cream, pie, oatmeal, or even pancakes.

Ingredients

  • 32 ounces fresh, sweet strawberries (thawed frozen will work, too), hulled and sliced in half, (2 pounds)
  • 2-3 tablespoons agave nectar
  • 1 squeeze fresh lime juice, optional
  • Ice cubes, optional
  • Fresh strawberry or lime slices for garnish, optional

Instructions

  • Set up your juicer and weigh out the strawberries.
  • Rinse and hull the strawberries. Slice in half.
  • Turn on the juicer, add the strawberries, and collect the extracted juice.
  • Add the agave nectar to the fresh strawberry juice. Stir or whisk well.
  • Pour into a glass over ice (if desired) and add a squeeze of fresh lime juice, if desired. Garnish with fresh strawberry and/or lime slices. Enjoy!

Notes

  • Sugar Substitute - You can easily replace all of added sweetener in the recipe by juicing 3 cups (around 3 small) of sweet apples (washed and sliced thickly) along with the strawberries. The best apples to use include Fuji, Gala, Ambrosia, or Juici. This method will give you more liquid, so you will have about three extra ounces in the end. Feel free to add less or more apples to your taste preference.
  • Fresh Vs. Frozen - If you only have frozen strawberries, thaw them overnight in the fridge. There’s no need to slice them before juicing because they will be extra soft. If you wish to save a step, you can even buy sweetened frozen strawberries to use in this recipe. They tend to be very sweet, so you may want to use a small container of fresh (or unsweetened) strawberries along with them.
  • Don't have lime? Use lemon juice instead!
