  • Cauliflower—Use fresh cauliflower and chop into uniform-sized florets for consistent baking. If you must use frozen, make sure to thaw first and pat dry with a clean lint-free kitchen towel to prevent them from becoming soggy.
  • White rice flour—Or regular all-purpose flour works too. This helps to thicken the batter and crisp up into golden deliciousness!
  • Vegan wing sauce—I used Frank’s Red Hot which is easy to find at more grocery stores.

For the Dipping Sauce

  • Vegan mayo—Choose any plant-base mayonnaise to create a creamy base for the ranch dip.
  • Vegan sour cream—Opt for a dairy-free sour cream alternative for richness and tanginess.
  • Vegan Worcestershire sauce—Ensure your Worcestershire sauce is vegan-friendly. If you can’t find any, feel free to omit it.
  • White vinegar—Adds a touch of acidity to balance out the richness.
  • Fresh herbs—Dill, parsley, and chives add tons of flavor to this vegan ranch dip. You can use dried herbs, but you’ll need to adjust the amount 3:1 fresh to dry.

How to Make Vegan Cauliflower Wings

Vegan wings are easy to make and incredibly delicious with just a few simple ingredients! All you need is some cauliflower, seasonings, and your favorite vegan buffalo sauce.

Step 1: Start by preheating your oven to 400 degrees F and line a baking tray with parchment paper.

Step 2: Wash the cauliflower and chop it into florets. You can make them bigger or small depending on your preference of wing size.

  • To help the batter stick better to the cauliflower wings, pat dry your cauliflower first after washing. If they’re dripping with water it will dilute the batter and take longer for the wings to crisp up in the oven.
  • Space your vegan wings out evenly on the baking tray so that they evenly coat. You can also cook these in an air fryer for even less time! Spread them out evenly and cook for 10-15 minutes, flipping halfway.

Since cauliflower has high water content, these wings are best eaten right out of the oven but if you find yourself with leftovers, stick them in an airtight container and keep in the fridge for a few days.

To reheat, the oven is best for maintaining crispiness. Place them on a baking sheet and bake for about 5 minutes at 350 degrees F until heated through. An air-fryer also works well for reheating. For something faster, microwaving is fine, too. The cauliflower wings just won’t be as crispy as when first baked.

While fresh is best, you can definitely use frozen if that’s all you have. Just make sure to thaw the cauliflower fully, then pat dry to remove any excess moisture before dipping in the batter.

Vegan Wings

  • 2 medium cauliflower heads (about 2 lbs each) chopped into florets
  • 1 cup white rice flour
  • ¼ teaspoon salt

  • 1 12-ounce bottle buffalo wing sauce I used Frank’s Red Hot which is available at most supermarkets

  • 1 cup vegan mayo

  • 1 teaspoon white vinegar
  • 1 tablespoon fresh dill chopped
  • 1 tablespoon fresh chives chopped
  • ¼ cup fresh parsley chopped
  • 1 clove garlic minced
  • teaspoon cayenne pepper
  • ½ teaspoon black pepper

Instructions

  • Preheat your oven to 450°F and prepare a baking sheet with parchment paper.
  • Combine the water, white rice flour, salt, paprika, and garlic powder in a large bowl. Whisk together to combine.
  • Thoroughly coat the cauliflower florets with the batter and place on the prepared baking sheet, evenly spaced out.
  • Bake on the center rack for 18-20 minutes, until they are slightly brown on the top.
  • Meanwhile, prepare the vegan ranch dip. Add all of the ingredients to a bowl and mix well to combine. Set aside.
  • Remove cauliflower wings from the oven and coat them in buffalo sauce. For best results, pour the sauce into a bowl and carefully dip each cauliflower into the sauce using a slotted spoon or fork (cauliflower will be hot).
  • Return buffalo cauliflower back into oven to crisp up for another 5 minutes.

How To Make Vegan Chicken Pot Pie

Make The Crust

For the crust, blend the flour, salt, and vegan butter in a food processor until it resembles a coarse meal. Add 1⁄4 cup of ice water and pulse until the dough clumps together, ensuring not to overmix.

When you can press the mixture together to form a pliable (but not moist or sticky) dough, it’s ready. If necessary, add more water 1 tablespoon at a time to reach this consistency. Roll the dough into a 10 × 10-inch shape (about 1⁄4 inch thick) between two parchment paper sheets on a baking sheet. Chill it in the refrigerator (keeping it on the baking sheet for easy handling) for at least 15 minutes.

Prepare The Filling

For the vegetable filling, sauté onions in vegetable oil over medium heat for about 5 minutes until translucent. Add mushrooms, carrots, garlic, salt, basil, marjoram, and pepper, and sauté for another 5 minutes.

Remove from heat and gently fold in the tofu, peas, and potatoes. Set aside.

Make The Béchamel Sauce

Preheat the oven to 450 degrees F. To prepare the béchamel sauce, blend water, cashews, mustard, salt, and nutmeg until smooth. In a medium saucepan over medium-low heat, melt the vegan butter, add the flour, and whisk for 2 minutes until it forms a roux.

Gradually whisk in the cashew cream mixture. Increase the heat to medium and cook, whisking often, for approximately 10 minutes until the sauce thickens.

Combine the sauce with the sautéed vegetables, creating a stew. Transfer the mixture to a 9-inch pie pan. A 9 × 13-inch baking dish can also be used.

Retrieve the chilled crust from the refrigerator, peel off the top parchment sheet, and invert the dough onto the stew using the bottom parchment. Create 8 to 10 decorative 2-inch slits in the crust for venting.

Place the baking dish on a rimmed baking sheet to catch any drips. Bake for 30 minutes, then turn on the broiler and broil for about 5 minutes until the top lightly browns. Serve while hot.

  • Short on time? Use a ready-made puff pastry. It’s easy to use and you can always have it available for you in your freezer and cook these pies spontaneously when you’re out of ideas.
  • If you are making your own dough, don’t skip the chilling step. Chilling the crust dough in the refrigerator is essential to prevent it from becoming too sticky and difficult to work with. It also helps create a flakier texture.
  • With either crust, make sure you slit it with decorative vents to allow steam to escape during baking. This prevents the filling from becoming too watery.
  • To achieve a beautifully browned top crust, turn on the broiler for the last few minutes of baking. Keep a close eye to prevent burning.

Storage

  • Refrigerator: If you have leftovers, allow the pot pie to cool to room temperature, then cover it tightly with plastic wrap or aluminum foil. Alternatively, you can transfer it to an airtight container. Store it in the refrigerator for up to 3-4 days.
  • Freezer: To store the pot pie for an extended period, it’s a good idea to freeze it. Allow the pot pie to cool completely, then wrap it in several layers of plastic wrap or aluminum foil to prevent freezer burn. Place it in an airtight, freezer-safe container or a resealable freezer bag. Label it with the date and contents. A well-frozen vegan chicken pot pie can stay good for 2-3 months in the freezer.
  • Reheating: When you’re ready to enjoy the leftovers, you can reheat individual servings in the microwave or reheat the whole pot pie in the oven. For the microwave, cover with a microwave-safe lid or a microwave-safe plate, and heat in short increments until heated through. For the oven, preheat it to 350°F (175°C), place the pot pie in an oven-safe dish, and reheat for about 20-30 minutes, or until it’s hot all the way through. Ingredients

Crust:

  • 2 ¼ cups all-purpose flour
  • ½ teaspoon salt
  • ½ cup plus 2 tablespoons vegan butter
  • ¼ cup ice water plus up to 5 additional tablespoons as needed to form a dough

Vegetable Filling:

  • 2 tablespoons vegetable oil
  • 3 cups yellow onions diced
  • 2 cups button mushrooms sliced
  • 1 ⅓ cups carrots diced
  • 1 large clove garlic minced
  • 2 teaspoons salt
  • ¾ teaspoon dried basil
  • ¾ teaspoon dried marjoram
  • ¾ teaspoon ground black pepper
  • 8 ounces extra-firm tofu (half a 16-ounce block) drained and sliced into tiny cubes
  • 1 cup frozen green peas
  • 2 ½ cups yellow potatoes cubed, steamed until soft

Béchamel Sauce:

  • 3 cups water
  • ¾ cup raw cashews
  • 1 ½ teaspoons Dijon mustard
  • 1 teaspoon salt
  • teaspoon ground nutmeg
  • ¼ cup vegan butter
  • ½ cup all-purpose flour

Instructions

  • To prepare the crust, combine the flour, salt, and vegan butter in the bowl of a food processor and pulse until the mixture looks like a coarse meal. Add 1⁄4 cup of ice water and pulse until the dough clumps together, but do not overmix. When you squeeze the clumps with your hand, the mixture should come together to form a pliable (but not moist or sticky) dough. If needed, add more water 1 tablespoon at a time until you reach that consistency. Between two sheets of parchment paper on a baking sheet, roll the dough to a 10 × 12-inch rectangle (about 1⁄4 inch thick). Chill the rolled-out dough in the refrigerator (keep it on the baking sheet to make it easy to transfer) for at least 15 minutes.
  • To make the vegetable filling, heat the vegetable oil in a large sauté pan over medium heat. Add the onions and sauté for about 5 minutes, until the onions are translucent. Add the mushrooms, carrots, garlic, salt, basil, marjoram, and pepper and sauté for another 5 minutes. Remove the pan from the heat and fold in the tofu, peas, and potatoes. Set aside.
  • Preheat the oven to 450 degrees F.
  • To make the béchamel sauce, in a high-powered blender, combine the water, cashews, mustard, salt, and nutmeg and blend until completely smooth. In a medium saucepan over medium-low heat, melt the vegan butter and add the flour. Whisk for 2 minutes until the mixture begins to clump and toast up into a roux. Whisk in the cashew cream mixture. Increase the heat to medium and cook, whisking frequently, for about 10 minutes, until the sauce thickens.
  • Pour the sauce over the sautéed vegetables and stir to combine into a stew. Transfer to a 9 × 13-inch baking dish.
  • Remove the chilled crust from the refrigerator and peel off the top sheet of parchment. Lift the bottom sheet of parchment along with the dough and invert the dough onto the top of the stew. Slice 8 to 10 decorative 2-inch slits into the crust as vent holes.
  • Place the baking dish onto a rimmed baking sheet to catch any drips. Bake for 30 minutes. Turn on the broiler and broil for about 5 minutes to lightly brown the top. Serve hot.

Friendly Suggestion: No time to make your own piecrust? Frozen crusts work great with this recipe. You can also bake individual pot pies in small ramekins, topping with a round of crust and slicing an X in the center of each top to vent.

What’s Thanksgiving without the Turkey? Take it from someone who has been celebrating a meat-free Thanksgiving for more than 25 years—you can have all the best parts of Thanksgiving without the turkey. Trust me. But you don’t have to give up that savory centerpiece in order to celebrate a compassionate holiday. There is another option.

You can choose kindness and turkey by swapping the bird for a Tofurky! Or a Field Roast, or a Gardein roast, or a homemade seitan roast, or any of the many vegan turkey roasts out there today. 

Today we’re going to show you how to prepare a Tofurky roast—but note that this method also works beautifully with Field Roast (my personal favorite vegan Thanksgiving roast).

Preparing a vegan turkey roast is a whole lot easier than prepping a bird. Most vegan Thanksgiving roasts come pre-stuffed with delicious plant-based stuffing, so all you need to do is smother your roast with a baste, surround it with veggies, wrap it all up in tin foil in a casserole dish, and bake it to perfection!

Vegan Tofurky Roast Recipe Ingredients

The Best Tofurky Baste

If you look on the back of the Tofurky box, you’ll see a recipe for a simple base made with 3 tablespoons of olive oil, 1 tablespoon of soy sauce, and herbs. You can certainly use that vegan turkey baste recipe, but you’ll see the garlic rosemary baste I use in the recipe below. 

Here’s what you need for the best Tofurky baste:

  • Olive oil
  • Minced garlic
  • Fresh rosemary
  • Salt

That’s it! This makes enough to coat the vegetables and the vegan turkey roast to create a really beautiful rosemary and garlic infused meal. 

Pick Your Veggies

Baking your Tofurky surrounded by roughly chopped vegetables is a great way to create an instant healthy side-dish to enjoy with your turkey. Even outside of Thanksgiving, my husband and I made this meal regularly for dinner to enjoy with some gravy. The veggies I always include are the classics:

  • Potatoes (I use 3-4 Yukon Gold potatoes but any potato will work)
  • Carrots (I use at least 2 large carrots)
  • Onion (I use either one small yellow onion or a red onion, and I like it sliced into strips but you can also chop it into big chunks.

You can use any vegetables you’d like, keeping in mind that they’ll be roasting for about an hour and half at 350 degrees F. Sweet potatoes are delicious, as are any root vegetable (like beets or parsnips), and halved Brussels sprouts work great as well. Use what you have!

Should I Peel the Potatoes and Carrots?

Great question! It’s up to you. You certainly can, but I choose not to peel mine for a few reasons:

  • Convenience (saves time and effort)
  • Extra nutrition (vegetables like potatoes often have even more nutrients in the skin)
  • Preventing food waste (no need to discard edible parts)
  • I like the rustic feel

How to Cook a Tofurky Roast

  1. Before starting, thaw your Tofurky roast in the refrigerator for 24 hours.
  2. Preheat the oven to 350 degrees F. Line a casserole dish with large pieces of tin foil, ensuring enough foil to reach up the sides and connect with the top piece to be added later.
  3. Unwrap the Tofurky and place it in the foil-lined dish. In a small bowl, combine olive oil, minced garlic, chopped rosemary, and salt, mixing thoroughly.
  4. In a large mixing bowl, coat chopped carrots, sliced onions, and potatoes with two tablespoons of the oil mixture, then arrange them around the Tofurky in the casserole dish.
  5. Spread 1 heaping tablespoon of the oil mixture on top of the Tofurky using a spoon or basting brush. Cover with tin foil, sealing the top and bottom foil to enclose the Tofurky and veggies. Bake for 1 hour and 20 minutes.
  6. Remove from the oven, uncover, add the remaining oil mixture on top of the roast, and bake for an additional 10 minutes.
  7. Take out of the oven, remove the foil, garnish with rosemary sprigs, and savor the deliciousness!
How to Make Tofurky

How to Slice Tofurky

There is a great divide among vegans regarding how they like their Tofurky sliced. Some like it thick—a big hunk of vegan turkey taking up nice real estate on the plate that requires a knife to saw into. Others like it thinly sliced—almost shaved—which is actually the method Tofurky (the brand) recommends.

Over my 13+ years of celebrating vegan Thanksgivings, I’ve always seen roasts cut into thick slices because they’re easier to serve to a crowd that way (the stuffing won’t fall out), but I’m eager to try the thin slice with my next roast. Do you have a preference? Let us know in the comments! 

Either way you cut it, you’ll want to use a very sharp knife (choosing a serrated knife helps). Some people even use an electric knife which is especially helpful if you want thinly shaved slices. 

Tip: time your cooking so that you pull the Tofurky out of the oven right before you sit down to eat! It’s a million times better hot out of the oven. Also keep in mind sliced Tofurky dries out quickly so don’t cut it until you’re ready to eat, and keep your roast covered until then as well.

Where Can I Buy Tofurky or Field Roast? 

One of the hardest parts of bringing this meal to life is finding your vegan holiday. Tofurky and Field Roast are seasonal items, meaning many stores don’t start selling them until November, and stores commonly sell out before Thanksgiving.

My suggestion is: buy your roast as soon as you see it! They freeze beautifully, so if you know you’ll be making a vegetarian roast for Thanksgiving and you spot one while you’re out shopping, toss it in your cart. Don’t wait, because there’s no guarantee you’ll find it again. Or you may have to drive around to a number of grocery stores to track it down, which is never a welcome scavenger hunt when life is already busy. 

I got this Tofurky at Sprouts, but in years past I’ve gotten them at Whole Foods, my local natural foods store, and Safeway. If you need to find one fast, call the stores you’ll be visiting first to make sure they have them. 

If you’re on the hunt for a Tofurky Roast, here are some nationwide grocery chains that typically stock it:

There was no winner! We all had different favorite picks. Some people hate Tofurky but love Field Roast. Some love Gardein but can’t stand the others. My personal favorite is Field Roast, but that doesn’t mean it will be yours.   • 1 Tofurky Roast

  • Remove plastic wrap from Tofurky and place the roast inside the foil lined dish. 
  • In a small bowl, add the olive oil, minced garlic, chopped rosemary, and salt and mix well. 
  • In a large mixing bowl, add the chopped carrots, sliced onion, and chopped potatoes, and two tablespoons of the oil mixture. Mix until evenly coated and then place the veggies into the foil-lined casserole dish surrounding the Tofurky. 
  • Using a spoon or a basting brush, spread 1 heaping tablespoon of the oil mixture atop the Tofurky roast. 
  • Cover with tin foil and seal the top and bottom foil together so the Tofurky and veggies are completely enclosed. Bake in the oven for 1 hour and 20 minutes. 
  • Remove from oven, uncover, add remaining oil mixture on top of the roast, and bake for an additional 10 minutes. 
  • Remove from the oven, remove the foil wrap, garnish with sprigs of rosemary, and enjoy!

Notes

Sliced Tofurky can dry out quickly, so only slice what you’re planning to eat right away, and tightly wrap the rest.
To store, wrap in foil and store in a sealed container in the refrigerator. To reheat in a microwave, cover with gravy or moisten with water and cover with a moist paper towel.

Unlike the other roasts, this is available year-round and sold as both a full-roast and a half-roast (perfect for slicing and putting on sandwiches).

This is a popular choice among people who don’t want to be eating an “exact replica” of a turkey, and appreciate seeing lentils and herbs indicative of a roast made from whole plant foods. This roast also tends to be more popular among omnivores, because it doesn’t try to be turkey.

Field Roast Hazelnut Cranberry En Croute

If you really want to wow your guests, pick up one of Field Roast’s Hazelnut Cranberry En Croute roasts. These special roasts are wrapped in phyllo dough and include some festive flavors of Thanksgiving.

Is Fish Healthy for You?

Many people intentionally include fish in their diet because of perceived health benefits. The usual arguments made in defense of eating fish are based on fish as a source of high-quality protein, iodine, and various vitamins and minerals, including Omega-3.

Some people will point out the relationship between Omega-3 and brain development, or between fatty fish and the reduction in the risk of heart attacks and strokes.

But here’s the happy-catch! Fish is not the only source of Omega-3. It’s also found in chia, walnuts, flax seeds, and more. And your risk of heart attack and stroke can greatly be mitigated by following a wholesome plant-based diet.

Cholesterol, Mercury, and PCBs in Seafood

The first is cholesterol. Most fish and seafood will contain certain levels of cholesterol. While it seems broadly accepted that eating fish may help you manage your low-density lipoprotein (i.e., “bad” cholesterol) levels, there are certain foods like shrimp that your doctor may advise you to stay away from if trying to manage these levels. In comparison, plant-based foods contain zero cholesterol. 

The biggest risk of eating fish, however, is the potentially harmful levels of contamination. Fish can accumulate high levels of toxins like mercury and carcinogens like PCBs which will ultimately lead to high levels of contaminants in your body over time. The more seafood you consume, the more harmful this can be.

While there is no absolute consensus as to how much mercury or PCBs in fish, and ultimately humans, should be considered as dangerous, there is a broad understanding that the accumulation of mercury in the body can be very dangerous. Mercury is a heavy metal that is highly toxic and can impact the nervous system. It can even cause severe neurological symptoms and damage.

What About Fish Oil, DHA, and Omega-3s?

Thanks to decades of marketing campaigns from supplement companies, the idea that we need fatty fish in our diets to achieve optimal health are very deeply imprinted in our brains. But have we ever asked ourselves why?

Well, it turns out that the reason why we are “supposed” to eat fish is because of the specific fats they contain—namely DHA and Omega-3 fatty acids. It’s the good fats we’re after—not the fish itself!

There’s a general misconception that fish cannot feel pain. This is simply not true. The most recent research all points to the fact that fish are capable of suffering just like mammals and birds.

For quite some time it has been understood that fish have nervous systems that comprehend and respond to pain—despite differences in how the brains and nervous systems of fish have evolved over time in comparison with us. Neurobiologists have demonstrated this in a range of experiments. For example, we can see that fish respond to pain when injected with pain-inducing substances. Similarly, it has been shown that fish have neurotransmitters such as endorphins that work—to the best of our scientific knowledge—to provide pain relief.

These findings are further supported by our understanding of pain as an evolutionary adaptation that helps species to survive.

Yes, Fish Feel Pain And Experience Fear

In a similar context, research increasingly indicates that fish are also capable of feeling fear. This is something we may have witnessed in our companion animals when they’re exposed to an earthquake, fireworks, or being chased. In addition to being able to feel fear, research shows that fish also opt to not feel fear if given the choice.

Fish are not only able to feel pain and fear but also go to great lengths to protect their own lives. There’s no doubt that being jabbed with a sharp hook or suffocating is terrifying and painful to fish.

Choosing plant-based foods instead of seafood will prevent suffering and save lives. There’s no better reason than that!

How Does Eating Seafood Affect The Environment?

Commercial capture fishing, especially when controlled poorly and performed unsustainably (as it so often is), can severely impact the ecosystem. It’s estimated that almost 80% of the world’s fisheries are either fully exploited, over-exploited, depleted, or in a state of collapse.

Worse yet, it’s estimated that 90% of the stocks of large predatory fish, such as sharks, tuna, marlin, and swordfish, have already disappeared. At the current rate, unless we make changes fast, our oceans may be void of fish by as soon as 2048.

But the problem goes beyond the shrinking size or existence of a single species or population. The marine and ultimately earth’s ecosystem is heavily intertwined. The stress on (or disappearance of) a single species can eventually impact other species and even an entire ecosystem.

In addition, catching fish is not just catching fish. Depending on fishing techniques—for example, bottom trawling—huge amounts of by-catch may be caught together with the targeted fish. This can range from other fish and seafood to turtles, sharks, dolphins, and more. These animals, classified as “by-catch,” are typically discarded afterward, frequently dying in the process.

So when you decide to give up fish, you not only help to save that particular species. You also help save turtles, dolphins, and many other species dearly loved by all.

Trust us just this once and you’ll be so happy you did!

  1. Gather all Thanksgiving leftovers and two slices of bread.
  2. Preheat the air fryer at 400 degrees for 5 minutes (or turn on your oven/heat up the skillet).
  3. Spread the cranberry sauce on one side of the bread, add the mashed potatoes (and/or stuffing), and smoosh it down. Sprinkle with corn and peas. Add the slices of vegan deli turkey, plant-based meat, or lentil loaf. Finally, spread the gravy onto the other slice of bread and place it on top (with gravy on the inside). Season with salt and pepper. Spray the top of the bread with a little bit of oil.
  4. Place the sandwich in the air fryer and cook for 5 minutes at 350 degrees. Turn, spray the other side with oil, and cook for another 3 minutes.

No worries at all. You can completely eliminate the spray oil if you wish. The sandwich will still toast up and taste amazing, though it might not have the same crispiness or golden color.

  • Spray the outside of the top slice of bread with a little bit of oil.
  • Cook for 5 minutes at 350 degrees until the outside looks crisp and golden and then gently flip the sandwich over, use a little more spray oil on the other slice of bread, and cook for another 3 minutes. Check often once you flip the sandwich over so that it doesn’t burn. Once done, use a spatula to remove the sandwich. Slice in half or diagonally and enjoy immediately!

Notes

  • Other Cooking Methods – This sandwich can easily be heated up in the microwave for 1-2 minutes (warm, but soft), in the oven at same temperature for 10-15 minutes (or until desired crispiness), or on the stovetop using a non-stick skillet. Bring heat to medium high and fry on one side for approximately 4 minutes and then 2-4 minutes on the other. Keep a careful eye on it while cooking because it really does depend on your skillet and the heat from your stovetop.
  • Gluten-Free Version – Use a gluten-free, vegan bread and also choose a vegetable, soy, or bean-based loaf (such as lentil, chickpea, etc) instead of the vegan roasts, which are often made solely of wheat gluten.

Assembling your edible vessels is the most complicated part of this procedure, which is to say, it’s very simple! Don’t be daunted; you’ll be a pro after the first round.

  1. Keep your wonton wrappers covered with a moist (not damp or wet) kitchen towel. You don’t want them to dry out while they’re not in use, which will make them brittle and break when you try to press them into shape.
  2. Lightly oil the cupcake tins to make sure they don’t stick.
  3. Stack two wonton wrappers on top of each other, overlapping so that the corners alternate on top, forming a cute little crown.
  4. Let the weight of the filling press the wrappers down into the cups. If you use your fingers, you risk poking holes in the bottom or tearing them in the process.
  5. Bake until golden brown and remove from the pan as soon as they’re done to keep them nice and crispy. The longer they sit, the more they’ll steam and soften.

Ingredients

  • 1 package vegan beefy crumbles such as Plant Boss, Gardein, Beyond Meat, Boca, or Lightlife
  • 1 tablespoon vegetable oil
  • 1 tablespoon minced garlic or jarred garlic
  • 16.5-ounce can diced fire roasted tomatoes drained well (squeeze water out)
  • 24 wonton wrappers
  • ½ cup vegan shredded cheese
  • ½ cup vegan sour cream
  • 2 green onions sliced, for garnish
  • 3 cherry tomatoes quartered, for garnish

Instructions

  • Preheat oven to 400 degrees F.
  • In a sauté pan, cook vegan meatless crumbles according to package instructions.
  • Once cooked, add garlic and drained fire roasted tomatoes and saute until there is no liquid left in the pan.
  • Lightly coat a 12-cup cupcake pan with vegetable oil. Place two wonton wrappers into the bottom of each pocket, shifting the top wonton layer slightly so the corners come up the sides of the cupcake tin and creates pretty taco cups. Spoon the cooked vegan meat mixture into each cup and top with a sprinkle of vegan cheese. Bake for 15 minutes or until wonton wrappers start to turn golden brown and vegan cheese becomes melty.
  • Remove from oven and add a dollop of vegan sour cream to each wonton cup. Top with green onions and a fresh tomato slice on each and enjoy!

How To Roast Cauliflower Steaks

You can easily roast cauliflower steaks in a number of ways! Our favorite method is the oven but you can easily air fry or grill them! Here’s how to make cauliflower steaks in the oven.

Step One: Preheat your oven to 425F. Prepare two large-rimmed baking trays with parchment paper, or lightly oil them.

Step Two: Place the sliced cauliflower in a single layer on the baking trays and brush with a bit of olive oil. You can also use cooking spray if desired. Sprinkle with a little salt and black pepper to taste.

Step Three: Roast the cauliflower in the oven until tender and it starts to turn golden brown, about 25 – 30 minutes. Flip them over halfway for even cooking, using a large metal spatula to assist.

Step Four: While the cauliflower steaks are roasting, make the sauce. In a skillet over medium heat, heat oil, then add mushrooms and scallions, sauteeing for about 3 minutes to soften.

Step Five: Add the wine, lemon juice, and capers, and continue cooking until the liquid reduces slightly, stirring often. When it’s almost ready to serve, add the parsley and stir in the butter to melt it into the sauce.

  • Air Fried: Preheat the air fryer to 400°F. Place the cauliflower steaks in a single layer and cook for 13-15 minutes, flipping at 10 minutes.
  • Grilled: Preheat your grill to medium-high heat, aiming for around 400-425°F. Lightly oil the grates to prevent sticking. Grill cauliflower steaks for 5-7 minutes on each side, or until they have grill marks and are tender but still slightly crisp.

Roasted Cauliflower Steaks

This roasted cauliflower recipe is delicious! When you cut a head of cauliflower like you would a loaf of bread, the resulting slabs can be roasted and served as delicious cauliflower steaks. My favorite way to season them is with a luscious lemony piccata sauce and mushrooms atop a serving of creamy mashers.

Ingredients

  • 1 head cauliflower cored
  • olive oil for cooking
  • salt and freshly ground black pepper
  • 1 cup sliced mushrooms
  • 2 scallions minced
  • cup dry white wine or vegetable broth store-bought or homemade
  • 3 tablespoons fresh lemon juice
  • tablespoons capers drained
  • ¼ cup fresh parsley minced 
  • 2 teaspoons vegan butter store-bought or homemade, chilled
  • mashed potatoes with sour cream and chives for serving

Instructions

  • Preheat the oven to 425°F. Lightly oil two large rimmed baking sheets or line them with parchment paper.
  • Place the cauliflower on a cutting board, cored-side down, and use a long serrated knife to cut it into ½-inch-thick slices, as if you were cutting a loaf of bread. Arrange the cauliflower slices in a single layer on the prepared baking sheets and brush with a little olive oil or spray with cooking spray and season with salt and pepper to taste. Roast the cauliflower until tender and nicely browned, 25 to 30 minutes, turning once with a large metal spatula about halfway through.
  • While the cauliflower is roasting, make the sauce. Heat 2 teaspoons of oil in a skillet over medium heat. Add the mushrooms and scallions and sauté for about 3 minutes, or until softened. Add the wine, lemon juice, and capers and cook, stirring, until the liquid reduces slightly. Just before serving, add the parsley, then stir in the butter to melt it into the sauce.
