Hi Jill! Just saw your question; yes, maple syrup or golden syrup would both be great choices. Enjoy!

Hi there, recipe author here! Yes, you could absolutely substitute maple syrup instead of agave. Hope that help!

My Italian grandmother (who is now 100 years old!) used to make these cookies for Thanksgiving (and sometimes Christmas) every year. It was so sad not being able to have them after becoming vegan, but now I can enjoy them again this holiday season. Yay! I love how super thin, crisp and fragile they are. For some reason, that makes them taste even more decadent and delicious. Can’t wait to bake these and share them with her 😀

Hannah Kaminsky is one of my favorite vegan bakers, I’ve loved her plant based dessert recipes for years! I got almond meal JUST so I could make these!! YUM 🙂

I didn’t know these were so easy to make vegan! We have always loved Florentine cookies and now there is no excuse to have a bunch on hand. A very elegant cookie!

These Italian cookies are so delicious and delicate. If you make a big batch they could make a perfect gift when visiting someone 🙂
