This is the year of the squash recipes for me!! I’ve been eating so much squash and can’t get enough of it. Kabocha squash, Delicata squash, air fried squash, stuffed squash, baked and roasted squash, I want it all. Big YUM to this!

If you’d asked me when I was young if I would ever eat squash, I would have said “no way”! Now that I’m older and know better, squash is one of my favorite things to make. Super nutritious and really tasty. I find myself craving this dish every week at least!

Simply delicious! This is a fabulous side dish for a holiday dinner, especially sprinkled with pomegranate seeds for festive color. Easy and quick dish to prepare.
