When the chocolate cravings strike they must be met! This 4-ingredient no-bake chocolate pie recipe is the perfect solution to those imminent cocoa cravings creeping up at around 5 o’clock. The simplest ingredients and not much time spent in the kitchen make this pie from the Plant-Based On A Budget cookbook a true keeper!

Instead of making a chocolate ganache filling that requires heating heavy whipping cream on a stovetop, this recipe uses silken tofu, which blends beautifully into a creamy and velvety filling. I’ve used this technique before to make chocolate mousse and vegan pudding!

Are you up for the no-bake pie challenge? It’s the easiest and most delicious chocolate pie you’ll ever make. No tricky techniques or steps and it involves a blender, a microwave, and a fridge. Doesn’t get easier than that! You have to try it!

Ingredients Needed and Substitutions

This chocolate pudding pie is made with a secret ingredient—silken tofu! You can’t taste the tofu at all, but you’re left with a creamy pudding-like consistency without needing to prepare a packet of instant pudding or whip heavy cream. With just a few extra ingredients, this pie is a snap to make!

Dairy-Free Semisweet Chocolate Chips

Opt for high-quality vegan semisweet chocolate chips to ensure a rich and indulgent chocolate flavor.

Silken Tofu

Select a 14-ounce block of silken tofu, also known as “soft” tofu. Ensure it is well-drained to achieve a smooth and creamy texture in the pie filling. Silken tofu contributes to the pie’s velvety consistency.

Vanilla Extract

Use pure vanilla extract to enhance the overall flavor of the chocolate pie.

Graham Cracker Pie Crust

Choose a pre-made vegan graham cracker pie crust for convenience or prepare your own using vegan graham crackers and plant-based butter. Crumble them together and press it tightly at the bottom of the pan. Ensure the crust is firm and well-set to support the creamy filling.

How To Make This Easy No Bake Chocolate Pie

For the Pie

In a small microwave-safe bowl, heat the chocolate chips for 45 seconds, stirring with a fork until smooth. If the chocolate remains lumpy, microwave in 20-second intervals, stirring in between, or use a double boiler for an alternative melting method.

Blend the melted chocolate, tofu, and vanilla in a blender or food processor until creamy, then pour the mixture into the pie crust and freeze for 30 minutes until the filling solidifies.

The pie can be refrigerated for up to 5 days.

For the Coconut Whipped Cream

Refrigerate a can of coconut milk overnight or for at least 6 hours. Once chilled, the milk and water will have separated. Remove the lid and pour out the water (which can be saved for a smoothie). In the bowl of an electric mixer, whisk the solidified coconut milk, vanilla, and powdered sugar on high for 5 minutes until fluffy. Alternatively, use a hand whisk if an electric mixer is unavailable. Serve immediately.

Topping Ideas

To top off this no-bake chocolate pie you can make this delicious coconut whipped cream. It compliments the intense chocolate flavor of the pie perfectly. Or use any store-bought vegan whipped cream you prefer.

Want to change it up? Try these other tasty toppings:

  • Coconut yogurt. Another great idea if you don’t want to work extra for the topping cream, is to top it with very thick and fatty coconut yogurt and drizzle a bit of maple syrup on top.
  • Dust with cocoa powder. Light dust the top with cocoa powder using a fine sieve for an extra layer of chocolate goodness.
  • Chocolate shavings. use a vegetable peeler to create delicate chocolate shavings for an elegant garnish.
  • Chopped nuts. Sprinkle with chopped nuts such as almonds, pecans, or hazelnuts for added crunch.
  • Edible flowers. Decorate with edible flowers for a visually stunning and whimsical touch.

Frequently Asked Questions

Can I use other crackers to make the crust?

Absolutely! You can choose any easy to crumble cracker or cookie. If you notice that the crackers you use don’t hold very well you could add a bit of vegan butter to bring it all together. Just make sure you press them tight enough and the crust will harden with the cold. 

Can I freeze this no bake chocolate pie?

Yes, this pie is easy to freeze! After assembling, wrap it tightly in plastic wrap or aluminum foil. For added protection, place the pie in a large resealable plastic bag. Freeze the pie for up to 3 months. Thaw in the refrigerator overnight before serving.

No-Bake Chocolate Pie with Graham Cracker Crust

This no-bake chocolate pie is one of the easiest I’ve ever made. There are only four ingredients, and all of them can be snapped up at your local grocery store. For vegan chocolate chips, look at the ingredients and make sure they don’t say “contains milk.” I usually buy Trader Joe’s or Guittard semisweet chocolate chips. For the pie crust, Keebler’s graham-cracker crust is accidentally vegan and is a good bet.

  • 1 12-ounce bag dairy-free semisweet chocolate chips

Instructions

Toni’s Tips:
  • If you don’t have a graham-cracker pie crust handy, you can crumble your favorite cookies or graham crackers and pack them tightly into the bottom of an 8-inch pie dish. Then pour the tofu-chocolate mixture on top of the crumbs and place the pie in the freezer.
  • Avoid using coconut milk with guar gum because it prevents the milk from solidifying. If you can’t find one that is full-fat and doesn’t have guar gum, coconut cream also works.

What Is Caramel?

The only consistent, mandatory ingredient in caramel is sugar. That sugar is cooked over high heat until it dissolves and browns when it reaches 340 degrees Fahrenheit. Things start to get interesting when other components come into play.

  • If nothing else is added at that point, the caramel will harden into a brittle hard candy when it cools.
  • If a small amount of butter and cream is added, it can be turned into soft caramel candies.
  • If a larger amount of butter, and especially cream, is added, it will remain a pourable liquid and become caramel sauce.

Most caramel recipes also include a liquid sweetener to prevent crystallization while cooking, in addition to vanilla and salt to accentuate the natural flavors.

A Brief History Of Caramel

The origins of caramel are murky and hotly debated, but it’s generally believed to be an Arabic invention that came about around 1000 CE. At that time, it was known as kurat al milh, which translates to “sweet ball of salt.” Made with simply boiled water and sugar, the resulting candy was hard and brittle. Americans are credited with being the first to add milk and fat around 1850, producing the soft, rich treats most beloved today.

Given its versatility, today you’re likely to find caramel as an option on coffee shop and dessert menus across the globe.

Is Caramel Vegan?

Caramel can be vegan, but it’s usually not. Beneath those amber brown waves, a lot goes into making this sweet treat. So, how can you tell if caramel is vegan?

Traditional caramel is not vegan, since it’s made with a ton of dairy; conventional butter and heavy cream, which are animal products.

However, more fine confectioners and candy companies are making conscious, compassionate choices to source plant-based alternatives instead. Full-fat coconut milk is a natural substitute for cream and there are numerous vegan butters now available too.

A good rule of thumb that unless it clearly says “vegan” on the label, it’s safe to assume that it isn’t. One notable exception is at Starbucks, where the caramel syrup is accidentally vegan, so you can still get your fix by swapping it for the non-vegan caramel sauce.

Homemade Vegan Caramel Sauce

Vegan caramel sauce can be made exactly like the traditional version by simply swapping out the dairy with coconut products. It’s an easy process but may take some practice to perfect.

How To Make Vegan Caramel Sauce

  1. Heat sugar with a small amount of water in a medium saucepan over medium heat. Swirl the pan to combine and avoid stirring with a spatula, as this can make the sugar crystalize, creating a grainy texture.
  2. Eventually, the sugar will dissolve. The sugar syrup will be clear at first. Continue to cook, swirling the pan periodically, until it slowly develops a golden-brown color. When it’s dark, add either coconut oil or vegan butter along with full-fat coconut milk. Be careful as it may splatter.
  3. Remove from the heat and add in salt and vanilla, if desired. It will continue to thicken as it cools.

Heating sugar in cream to high temperatures creates rich, complex flavors. This is a wet caramel, where sugar is mixed with a liquid before cooking. It's a hands-off process, but it requires close monitoring. Be cautious, as it can quickly turn from blonde to burnt; consider removing it from the heat slightly lighter in color, as the sugars continue to cook off the stove. Corn Rib Cutting Technique

Our advice: slow and steady wins the race. Or, in this case, the corn! When making your cuts, just take your time and don’t strive for perfection. Even if the ribs are a little bit off, they’ll still be scrumptious.

  • First, cut the cob in half lengthwise to make two shorter cob sections. Not too bad, right?
  • Second, you’re going to stand the cob on its end so that it like a tall-ish cylinder. Keep in mind that the next steps are very similar to cutting a circular pizza.
  • Third, (now this is important) use slow, sawing motions with a sharp knife (you can try both a chef’s knife or bread knife to see which one works better for you) to cut through the center of the cob from top to bottom to make two semi-circular pieces. Do this for both cob sections. You should have 4 pieces total.
  • Finally, do the same thing for each of the semi-circular pieces so that they form spears (like pickles, only with corn). You should have 4 spears (or ribs) from each short cob section, making 8 total.

How to Make Corn Ribs

Please don’t feel intimidated by this simple rib recipe. Once you cut your first slice of corn, you’ll know what you’re doing and the rest will be a breeze.

  1. Pull the husks and silks off of the corn cob.
  2. Cut the corn into 8 rib spears.
  3. In a bowl, mix the butter and spices together.
  4. Coat each of the ribs on both sides with the butter mixture.
  5. Air fry the corn at 375 degrees for 8 minutes, flip, and then cook for another 4 minutes.

Ingredients

  • 1 corn on the cob uncooked
  • 1 tablespoon vegan butter melted
  • ¼ teaspoon garlic powder
  • ¼ teaspoon chipotle powder

Instructions

  • Note: the hardest part about this recipe is cutting the corn cob. Please be safe about this! It requires a very sharp large knife and a lot of muscle strength. 
  • Shuck the corn by removing the husk and all the stringy fibers (which can be discarded or added to your compost).
  • Cut the corn cob in half and then into quarters creating 8 spears that will be your “corn ribs.” Here’s how: Using a sharp knife, lots of muscle, and steady hands, slice the corn in half crosswise creating two much shorter cob (this is the easiest cut). Then, take one half, steady it on the cutting board, and cut it in half lengthwise. This is tough to do, and will require a see-saw motion with your knife as you slowly work your way through the core of the rind. Once cut, place each piece with thee flat side down, and cut in half lengthwise again, so you have four spears (“corn ribs”). Take your remaining half-cob and do the same, so you have a total of 8 corn rib spears.
  • In a small bowl, mix together the melted vegan butter, garlic powder, chipotle powder, and salt until well combined.
  • Using a basting brush, brush the buttery mixture evenly over all the corn ribs until they are fully coated.
  • Place the seasoned corn ribs into an air fryer, forming a single layer. Air fry at 375ºF for 8 minutes, flip, and cook for another 4 minutes.

  • Vegan Easter Egg Dyeing: Since you wouldn’t use animal eggs for this project, consider substitutes such as chalk or porcelain eggs instead.
  • Vibrant Vegan Frosting: Whether store-bought or homemade, you can always add a few drops of your favorite color to match the occasion. Mix up a number of small batches of colored frosting to create a layered rainbow effect!

Is Betty Crocker food coloring vegan?

Yes, their Decorating Gel Food Color is vegan-friendly.

Does food coloring expire?

Although homemade food coloring from natural foods or powders may expire within 2 weeks (even with refrigeration), commercially made food coloring usually does not expire. If stored correctly, it can last indefinitely. The worst that seems to happen is that the dye dries out, especially if it’s a gel formula. Otherwise, as long as it doesn’t have a foul odor, it’s safe to use.

Is red 40 vegan?

There are no animal-derived ingredients in red 40, but artificial colors like this are almost always tested on animals. Though this chemical color is technically vegan, it’s up to you whether or not you feel comfortable using it.

Looking for an eerie but enticing recipe perfect for a vegan Halloween party? These mildly macabre mummy dogs and mummy meatballs are sure to be a hit. Plus, they are paranormally quick and painless to make!

All you need are your favorite vegan haunted hot dogs and vegan magical meatballs and a creepy package of the Original Pillsbury Crescent Rolls. Yup, the Original Crescent Rolls are accidentally vegan! Watch the video below to see how they’re made.

How to Serve Up These Spine-Tingling Snacks

While you can certainly plop these right onto a plate, we love going the extra mile to create something magical. With just a few simple ingredients or household items, you can make these snacks into the most enchanted edibles ever!

Coffin It Up –  Make a creepy chocolate coffin using a silicone mold and cut your hot dogs to size before wrapping in the crescent roll dough. When the devilish dogs are done (and cooled), you can add the mummy to the coffin right before serving. Dinner and dessert in one!

Graveyard Grab n’ Go – Find an old wooden tray or cutting board (preferably one with sides) and cover with a layer of dark cookie crumbs (Oreos are accidentally vegan!). Create tombstone-shaped cookies using our delicious cookie recipe and add a thin layer of gray frosting (mixing black and white together) on all sides. Lay your mummy balls and dogs in front of the terrifying tombstones and cover with more cookie crumble. Then, it’s time to dig for a delicious (and possibly demonic) dinner.

Petrified Pumpkins on Parade – Find a few mini pumpkins and carve into cringe-worthy characters. Once cleaned out and spectacularly sinister, stand up the magnificent mummy meatballs and dogs inside. Serve along with a small cauldron of ketchup.

How to Make Your Vegan Mummy Meatballs and Dogs

We’ve been making these mummy dogs and meatballs for nearly a decade now for Halloween parties because they’re such a simple and fun treat. They’re always a huge hit and one of the first things to be gobbled up. You can find crescent rolls at many mainstream grocery stores and you can use any vegan meatballs and veggie dogs you’d like!

1. Use the tip of your finger to press and pop open the crescent roll container. Lay out the dough onto a cutting board.

2. Using a sharp knife, cut the dough into long, thin strips about ½-inch wide.

3. Wrap the strips in a mummy-like fashion (being as wiggly as you wish) around each of the vegan meatballs and hot dogs. Don’t forget to leave a little space on each to add the glowing red, ketchup eyes!

4. Place each onto a baking sheet and bake in a preheated 375 degree oven for 11-13 minutes, or until the mummies are all a ghostly golden brown.

5. When cooled a little, attach the decorating tip to the icing bag, pour in some ketchup, and make some eerie dots for eyes on each vegan meatball and hot dog.

Place on a spooky serving plate and use toothpicks to serve.

These mummy munchies are not only super easy to make, but require very little equipment. All you need is:

  • Cutting Board
  • Sharp Knife
  • Baking Sheet
  • Icing Bag and Small Round Cake Decorating Tip
  • Toothpicks (black, orange, or purple if you can find them)
  • Decorative Halloween Plate for serving (optional)

Can I make this recipe gluten-free?

Sadly, this crescent dough has wheat as an ingredient and is not gluten-free. But, if you have your own gluten-free pasty dough recipe that you like to use, feel free to use that in this recipe. Keep in mind that the cooking time and temperature will be different.

How can I reduce the fat?

There are a couple of ways in which you can reduce the fat in this recipe. If you’re worried about the saturated fat in the crescent roll dough, don’t hesitate to use whichever dough you prefer. You may wish to take a look at a few different brands of plant-based meatballs and hot dogs to find the one that has the lowest amount of fat. See below for more substitution ideas.

What if I (or my kids) don’t like vegan packaged meatballs or hot dogs?

No problem! You can use anything you like in this recipe. Feel free to substitute your own recipe for plant-based meatballs (we have a recipe for quinoa meatballs) or use vegetables instead. Long vegetables that would work well would be asparagus, carrots, or potato spears. Round foods that could be swapped instead of meatballs would be brussels sprouts, broccoli, cauliflowers, or even tater tots!

What can I do with the extra dough that I have left over?

Great question! Don’t throw away your extra dough. You can use it to make tiny little pies (just roll out a piece of dough, stick in a slice of apple inside, sprinkle on a little sugar, roll it up, and bake until golden brown) or use cookie cutters (a sharp knife works, too!) to create designs that you can add to the top of your pie. Ideas for shapes include: apples, leaves, half moons, hearts, etc. To attach, brush a little bit of water on the back of the dough shape and press it gently into the crust.

How to Store Your Leftover Apple Pie

The amazing thing about apple pie is that you can refrigerate or freeze it easily. Place your pie in a covered container or dish and refrigerate for up to a week. To freeze, wrap your pie slices up completely with either aluminum foil or plastic wrap (individually works best) and place the slices into a freezer-safe container or bag. The apple pie slices should last up to 3 months if sealed well.

To reheat from frozen, simply let the apple pie thaw overnight in the fridge and heat in the oven at 350 degrees for about 10 minutes or zap in the microwave for a minute or two (depending on the your oven or power of your microwave). How Can I Prevent A Soggy Bottom?

To prevent a soggy unbaked bottom crust:

Partially Pre-Bake the Bottom Crust: Pre-bake the crust for a few minutes before adding the filling. This process, known as blind baking, ensures the crust starts to cook before it’s exposed to any wet ingredients. Preheat the oven to 375 degrees F, prick the bottom crust with a fork and line with aluminum foil or parchment paper, fill it with pie weights, rice, or dry beans, and bake for around 14-15 minutes for a partially baked crust.

Thickener: Use thickeners like cornstarch, flour, or tapioca in the filling. This absorbs some of the excess moisture and prevents it from seeping into the crust. This is one of the reasons why this we use cornstarch in the apple pie filling for this recipe.

Reduce Juices: If you’re using fruits, consider boiling down their juices before adding them to the filling. This concentrates the flavor and reduces the overall moisture content.

High Oven Temperature: Begin baking at a higher temperature. This will set the crust quickly and prevent the juices from the filling from making it soggy. After the initial high heat, reduce to the desired temperature to finish baking.

Lower Oven Rack: Place your pie on the lowest oven rack. The direct heat at the bottom will help cook the base faster.

Prevent Overfilling: Avoid adding too much filling, especially if it’s a wet mixture. More moisture means a higher chance of a soggy bottom.

How to Avoid Pie Crust Edges From Burning

To help your pie crust edges from burning, make sure that your pie plate is on the middle or lower middle oven rack. If it’s on the top rack, the chances of burning are higher because of the closeness to the heating element. You can also place strips of aluminum foil around the edges about halfway through the cooking time, especially if you notice the edge of the crust getting browned faster than the rest. You can even invest in a handy pie crust shield that protects the crust from burning in the oven.

Is Apple Pie Vegan?

You would think that most recipes with fruit in them would be vegan-friendly but, sadly, that is not so. Apple pie is not usually vegan because recipes often add milk, eggs and/or butter to the crust and an egg wash may be added to the top crust to give it a glossy shine. We’ve found that you can get the same result using plant milk instead of the beaten egg mixture.

Be very careful when you purchase pre-made crusts. The popular Pillsbury pie dough contains lard, which is an animal-based fat. Plus, it’s pretty high in saturated fat. We recommend using a vegan-friendly version or making your own crust. You can easily adapt any pie crust recipe by swapping out the dairy butter for vegan butter, lard for vegetable shortening, and a flax-egg or egg substitute for eggs. 

Is it possible to turn this plant-based apple pie into a vegan gluten-free apple pie recipe? 

You’re in luck! Besides using a gluten-free pie crust (either homemade or pre-packaged), you can also make your own vegan apple pie crumb crust.  Choose almond flour, coconut flour, or even crushed up gluten-free cookie crumbs to create a bottom layer. Mix 1½ cups of fine crumbs with ¼ cup of cane sugar and 6 tablespoons of vegan butter. Press firmly into a pie plate and bake as usual with apple filling. Also, switch out the all-purpose flour (which thickens the apple pie mixture) for half the amount of arrowroot or cornstarch instead.

Super Easy DIY Vegan Apple Pie Ice Cream 

You might be asking, is it possible to make this myself? Even without an ice cream maker? And we say, YES! This uber-duber, DIY version takes only minutes to mix and only about an hour or so to set. You’ll be so glad you gave it a shot!

  • Grab a pint of your favorite, pre-packaged vanilla ice cream.
  • Take it out of the freezer and let it sit at room temperature until it is a little melty, but not entirely liquid.
  • While you’re waiting, take a slice of apple pie (cold leftovers from the fridge work best) and chop it up into small chunks, including the yummy crust. (In our opinion, the best part!)
  • Pour your softened ice cream into a mixing bowl and add the chopped apple pie pieces. Mix gently and well.
  • Scoop back into the pint container (this might get messy, but don’t worry too much), cover, and place back into the freezer (not on the door, it’s the warmest part of the freezer) for at least one hour. If you let it re-freeze overnight, it will be even better, especially if you stir it up at least once in the process.

You can do this with any type of pie and it’s so delicious. An excellent use for leftover half-slices or not-so-perfect pieces that you don’t wish to serve to family and friends.

Vegan Apple Pie Filling

  • 6 medium-sized apples washed, peeled, and sliced thinly. choose as many varieties as you can and most of them should be tart.
  • ½ lemon juice and zest
  • ½ cup granulated cane sugar
  • ½ cup brown sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 2 tablespoons vegan butter
  • tablespoons cornstarch
  • tablespoons water

Vegan Pie Crust

  • 2 pieces vegan pie crust dough
  • 1 teaspoon Cooking oil spray or vegetable oil

Topping (optional)

  • 2 tablespoons plant-based milk (or water)
  • 1 tablespoon cane sugar
  • 1 dash cinnamon

Instructions

  • Preheat oven to 425 degrees.
  • In a large bowl, add the apple slices, juice of the lemon (and zest, if desired), cane sugar, brown sugar, cinnamon, and nutmeg. Mix until apple slices are evenly coated.
  • Make the apple pie filling: In a large sauce pan over medium heat, add the butter and melt. Then add the apple mixture and allow to cook for 5 minutes, mixing regularly. In a ramekin, mix together the cornstarch and water and add it to the saucepan with the apples, and cook for an additional 2 minutes, until the liquid thickens. Remove from heat and allow to cool fully.
  • Spray the bottom of your pie plate with a little bit of oil. Add in your uncooked pie crust sheet. Center the crust and press gently along the bottom, sides, and pie plate edge.
  • Add the apple pie mixture to the pie crust and arrange the apples evenly. Place the top crust onto your apple-filled pie plate, either as one flat crust piece, or cut and assembled as lattices. Fold, press, and crimp the edges all around to seal the top and bottom of the pie crust together. If using a flat sheet of pie crust dough on top of the pie, using a sharp knife, make 4-8 very thin, short slices into the top center of the pie crust for ventilation. A simple star shape is the easiest, but feel free to make any lovely designs that you like.
  • Use a pastry brush to sweep a little bit of plant milk (or water) lightly over the top surface of the pie crust. Mix up the sugar and cinnamon to create a topping for the crust. Sprinkle the topping over the crust.
  • Place the pie into the oven on the bottom rack and bake for 30 minutes. If the pie crust edges are getting too brown, cover loosely with some aluminum foil strips to prevent burning. Turn the pie and bake for another 10-15 minutes, until golden brown and cooked through. Keep a a close eye on the pie in the last 5 minutes or so.
  • Once the pie is golden brown and bubbly, take it out of the oven and let cool on a wire rack for at least 30 minutes before serving. Enjoy!

A Brief History Of Gummy Candies

A relatively new food innovation, gummies as we know them have only been around since 1920. They can be traced back to a single person, Hans Riegl, in Bonn, Germany. He had a background in confectionary and was bored with the standard chewy taffies and hard candy lollipops. After much experimentation, bouncy gummy candies were born.

Bears were the very first shape, although they were originally called “dancing bears” before being bought by Haribo and re-branded. Haribo brought them to the US in 1982, while American company Trolli simultaneously launched gummy worms. Both were a hit with kids from the very start.

Are Gummies Vegan?

Conventional gummies are made with gelatin, which means they aren’t even vegetarian, let alone vegan. Gelatin is a powdered thickener derived from ground bones, hooves, and ligaments, often from cows, horses, and pigs. Kosher gelatin is no better, typically sourced from fish instead.

“Natural” colors can sometimes pose a problem as well, since cochineal and carmine, traditionally used to make red pigment, come from crushed beetles.

Furthermore, some brands use beeswax to give the outside a shiny finish and prevent the pieces from sticking together.

What are Gelatin-Free Gummies Made From?

Fortunately, an increasing number of manufacturers are dropping animal products in favor of more accessible, cruelty-free formulas. These plant-based treats are more likely to use the following:

  • Pectin, a soluble fiber (polysaccharide) that’s found in fruits, particularly apples and pears.
  • Agar, a jelly-like fiber derived from red algae seaweed.
  • Carrageenan, sometimes known as Irish Moss, is made from various parts of red seaweeds.
  • Cornstarch, tapioca starch, and potato starch are all common household thickeners made from pure carbohydrates without fiber.

Vegan Pumpkin Spice Latte (Dairy-Free)

This sweet and simple and spiced Pumpkin Spice Latte is made with real pumpkin puree and contains the best flavors of fall. After countless rounds of recipe testing, everyone agreed that this version was the best-of-the-best. Plus, if you make this vegan pumpkin spice latte at home instead of swinging by Starbucks, you’ll save money, too!

Ingredients

  • 2 cups vanilla soy milk the regular, sweetened kind
  • ¼ cup plus 1 teaspoon canned pure pumpkin purée without added spices
  • 3 tablespoons packed brown sugar
  • 1 ½ teaspoon pumpkin pie spice plus an optional dash for sprinkling
  • Pinch of salt
  • ½ cup strong freshly brewed coffee
  • Vegan whipped cream to taste

Instructions

  • In a small pot over medium heat, combine the soy milk, pumpkin purée, brown sugar, pumpkin pie spice, and salt and whisk vigorously. Turn the heat off as soon as the mixture starts to boil.
  • In your favorite mug, combine the hot coffee and the milk mixture. Top with vegan whipped cream and sprinkle with pumpkin pie spice (if using them).

Notes

Love Your Leftovers: You can use an ice cube tray to premeasure the remaining pumpkin purée and freeze it to use for your future PSLs. For extra efficiency, add premeasured amounts of brown sugar and pumpkin pie spice to each cube of pumpkin purée and freeze these all together, so you can just pop a frozen spiced pumpkin cube into the pot with soy milk when you want a latte.
