Ingredients
Noodle Bowl
3cupsspiralized zucchini
1½cupsspiralized carrots
½thinly sliced or julienned red bell pepper
½cupsugar snap peas
2green onionsfinely chopped
⅓cuproughly chopped cilantro
1½tablespoonsesame seeds
Sauce
½cuppeanut butteror any other nut butter or seed butter
2tablespoontoasted sesame oil
1clovegarlic
1teaspoonfresh ginger
2tablespoonslow-sodium soy sauce
2tablespoonslime juice
2tablespoonswater
Instructions
Add all of the vegetables and sesame seeds to a large bowl and toss to mix.
In a separate medium bowl, whisk together all of the sauce ingredients until smooth.
Pour the sauce onto the veggies and mix well to combine. Serve immediately. Store any leftovers in the fridge and consume within a few days.
